Grilling Night-June 2010


This past Thursday we got together for a night of grilling. It was fantastic! All of the food was amazing. 



Here is a sampling of what we ate....


Grilled Corn

Peel most of the husk off the corn. Leave enough to re-wrap. Soak to prevent scorching.

Pineapple and bacon wrapped bananas. 

Baste in soy sauce, honey and pineapple juice.

Stuffed Portobello Mushrooms

Cheryl and her amazing salmon.


Salmon
Put aluminum foil on a large cookie sheet.  Place opened salmon on the foil.  Sprinkle with Lowry's Season Salt.  
Mix equal parts butter and mayonnaise, not margarine or Miracle Whip.
It probably will take one cube butter and one cup mayo.
Spread all over salmon like frosting.  Grill with cover down or in the oven at 350 deg for about 20 minutes.  Do not over-cook...just until it flakes.
It is good hot and it is good cold, too.


Bannana’s Foster

In this recipe apple juice can be substituted for the liqueur

¾ cup packed light brown sugar
¼ cup kahlua
12 tablespoons butter cut into pieces 
6 ripe bananas, peeled and cut into ½ inch thick rounds
Ground cinnamon, to taste
Vanilla ice cream

Heat grill to medium. Tear off six 12 inch squares of foil. Fold square in half and unfold.  One the half below the fold place 2 tablespoons brown sugar, 2 tablespoons kahlua, and 2 tablespoons butters and 1 sliced banana.  Sprinkle with cinnamon.  Fold foil over to form a packet, crimping the open edges to seal.  Place packets on grill and cook until sugar, kahlua and butter are boiling 5-7 minutes.  Open the packets pour over bowls of ice cream, serve immediately

*I have also prepared this on the stove top-adding bananas after the sauce boils
