Fruit Salsa
2 green apples, finely diced
1 cup fresh strawberries, diced
1 cup kiwi, diced
1 cup fresh raspberries
1 Tbsp orange juice (for apples)
2 Tbsp brown sugar
After apples are finely diced, put apples into a mixing bowl and toss with 1 Tbsp orange juice. Then add strawberries, kiwi, and raspberries. Then, add brown sugar. Toss lightly until fruit is coated well, try to avoid damaging the raspberries.
Option: Add 1 cup fresh nectarines or peaches. Or try adding another one of your favorite fruits, although melons do not usually work very well.
Cinnamon Sugar Chips
12-15 flour tortillas
cinnamon/sugar (I buy the C&H premixed)
Spray bottle with clean water
Cut the tortilla chips into 2 inch strips or triangles. Lay flat on baking sheet lined with parchment paper. Lightly spray tortillas with water, then shake the cinnamon sugar mixture on top. Bake at 475 degrees F for 6-8 minutes. Check frequently because they cook quickly and burn easily.
